Breakfast is my favourite meal of the day – there are so many options if you are vegetarian/vegan and they are quite quick and easy to make. The best thing is you can fuel up and I think it makes more sense to eat more early in the day than at dinner time. In France they have a big lunch and then eat light in the evening and they all tend to stay slim despite eating copious amounts of bread and cheese and wine. So I think the eat like a King at Breakfast, a Prince at Lunch and a Pauper at Dinner is a good plan.

Here are some options for you to test out:

Breakfast Wrap

Spread almond butter (sugar free, 100% crushed almonds) onto a wholegrain wrap, add sliced banana, sprinkle with slice almonds, drizzle with wild honey. Roll wrap and grill.

Grilled Banana Bagel

Lightly toast wholegrain bagel, spread with nut butter. Melt a small amount of vegan butter or coconut butter in a pan, place length sliced banana in and sprinkle with cinnamon. Cook until blackened and then place on bagel and drizzle a little honey followed by some chai seeds.

Almond Milk Oats

Pour almond milk over organic porridge oats (almond milk goes very well with oats!) and place in microwave for 2 minutes. When hot drizzle with honey, sprinkle with toasted coconut flakes, chopped almonds, chia seeds and dried cranberries or cherries.

Coconut Toast

Toast oatmeal bread, place raspberries in a pan and cook until soft. Sprinkle desiccated coconut on the toast and then mash the hot raspberries on top.

Wild Blueberry Oatmeal

Pour almond milk over organic porridge , add chopped walnuts, sprinkle cinnamon and chia seeds, Add 1 cup of blueberries.

Almond Butter Banana Shake

Pour almond milk into blender, add 2 frozen bananas, 2 tablespoons almond butter, a dash of cinnamon, garnish with flaked almonds.

Chia Breakfast Pudding

Soak chia seeds in water for at least an hour or overnight. With the jelly like chai seeds mix with coconut milk and mashed banana. Place in microwave and enjoy hot.

Granola Feast

For the non vegans or you can use soya yoghurt. Place a handful of organic granola in a bowl. Pour yoghurt over the top. Layer sliced fruit – banana, strawberries and blueberries over. Sprinkle with chia seeds and sliced almonds. Drizzle with honey.

Very Simple Toast

Oatmeal or rye bread lightly toasted. Spread with nut butter. Sprinkle with seeds – sesame, flax, chai, whatever you like and then place sliced banana over the top. Simple but if done with care looks delicious and tastes delicious.

Coffee

So many choices – coffee with oat milk, coffee with almond milk, coffee plain black, espresso, coffee with coconut cream, green tea, breakfast tea, earl grey. Good God breakfast is great! It is worth getting up in the morning and eating with no guilt. Enjoy!
