These pancakes can be savoury or sweet but either way they are yummy and healthy.
Boil around 100g of quinoa and let it cool
Mix it with a coconut flour or wholemeal flour (200g), almond milk (3 tablespoons), and a pinch of brown sugar or a drizzle of agave syrup.
Put the mixture into a frying pan that has been heated with a touch of oil. `cook until pancake is formed and golden brown on each side.
For a sweet pancake drizzle with either agave syrup or honey, sprinkle with cinnamon, crushed almond and top with berries
For savoury lay pancake flat cover in roast vegetables, sprinkle with sesame seeds and drizzle with balsamic vinegar. You can also mix vegetables into the pancake mix – torn leaves of spinach, peas, chopped onion etc.
I am going to try these now! They sounds delicious! What a great idea to use quinoa. Maybe you could use polenta too…
I just had them for my evening snack and they were so good – I did drizzle them in agave syrup and sliced banana so a little stodgy but so satisfying! Pancake day soon so they will be perfect for that!
